Lemon Ice

2 cups sugar
4 cups water
2 tbs. grated lemon rind
1 envelope unflavored gelatin
1/4 cup very cold water
1 cup fresh lemon juice
2 egg whites
3 tbs. sugar
1/2 tsp. salt

Bring the 4 cups of water to a boil and dissolve the sugar. Boil 5 minutes, add lemon rind & cool.

In a small bowl, soften the gelatin in the cold water.

Combine the cooled sugar water with the softened gelatin. Add the lemon juice, stir and freeze until the sides are set and the center is slushy. Using an electric mixer, beat until foamy.

Prepare egg whites; beat until stiff peaks form, gradually adding sugar & salt. Fold egg whites into lemon mixture. Freeze.
